Another quick and super-healthy way to consume your kraut is with sardines. (I’m sure the sardine is not really the littlest fish, but to add-in this adorable reading, I’m saying it is.)
If you are a sardine fan, and especially if you like to eat them with mustard or something similarly tart, you will find that the kraut is a nice stand-in. I put them on rice crackers as a snack or small lunch, but I’m guessing that it would be nice on greens as a salad too. Matiz sardines are my favorite brand. They are very rich, definitely need something acidic to temper the richness of the olive oil they are packed in, but they fish themselves taste almost like tuna. Being smaller fish, they are safer than tuna, and because they are consumed with the bones they are a good source of calcium too! (As well as a bunch of other nutrients.) I have found them at Ballard Market and Savour (also in Ballard) but haven’t noticed them elsewhere. If anyone has a lead on other sources, please leave a comment.
